Lauren Lester is the founder of Srsly Vegan — a recipe developer, food photographer, and digital strategist based in Portland, Oregon. Her plant-based cooking is shaped by Appalachian roots with a global flair, bringing comfort and flavor into everyday recipes. She spent a decade in food media, co-founding two publications that reached millions of readers and co-authoring Cast Iron Keto, before going vegan in 2021. Alongside developing and selling more than 300 plant-based recipes to brands and publications worldwide, she builds brand systems and accessible websites for mission-driven organizations. She also serves as Director of Agency on the AMA PDX board, leading volunteer marketing teams that support community impact.
